Quercetin, the healing substance found in black tea and red wine, is a bioflavonoid (a substance found mostly in fruits and vegetables which helps the body fight inflammation, allergy, and infection). Quercetin is a type of plant pigment found in almost all herbs and plant foods. It is especially abundant in black tea, blue-green algae, broccoli, onions, red apples, and red wine.

Balch, CNC, in "Prescription for Herbal Healing," "Quercetin is an antioxidant (a substance that prevents or delays the aging process at the molecular level by inhibiting oxidation, spoilage, and degradation). Quercetin has been found to block destructive structural changes in cells, which helps to prevent abnormal cell growth. It also inhibits the synthesis of enzymes that can cause allergic reactions.
